Skinny chocolate-S

This recipe got us through some tough sugar withdrawal days. It really does taste like a naughty piece of chocolate, but it is actually bonafied "crunchy mama" health food.

Excerpt from the book " Many who have tasted this recipe say it tastes similar to the Almond Joy candy bar. It is a good way to get your servings of virgin coconut oil."

1/2 cup cocoa powder
1 cup virgin coconut oil
plan approved sweetener


  1. melt 1 cup virgin coconut oil in the microwave until it liquefies
  2. add coca powder, sweetener(we use 4tsp. Truvia) and optional ingredients.
  3. Wisk until blended
  4. pour into parchment lined glass pan or candy molds
  5. freeze until solidified
Can be enjoyed right from the freezer or softened in the refrigerator.

optional ingredients:
chopped nuts
ground instant coffee
unsweetened coconut
natural extract or essential oil
splash of heavy cream

Light tomato soup-E or fuel pull

 We really love this soup; it is light, comforting and very filling with a piece of toasted sourdough.


  • 1 15 oz. can tomato sauce
  • 15oz. of chicken broth (we use the empty tomato sauce can to measure)
  • 2/3 cup low fat yogurt or Greek yogurt.
  • 2 tsp. Truvia. and salt and pepper to taste
 add all ingredients to a medium sauce pan. Heat and whisk until ready. Add some parmesan cheese, mozzarella or toast depending on what kind meal you are eating.
